The key to a successful journey is choosing a routine that fits your season. If you are baking daily, a Countertop Routine kept in a warm spot like the top of the fridge is ideal. If life is busy, the Refrigerator Routine allows you to "pause" your starter, feeding it only once a week.
Discard is Not Waste
The term "discard" is a misnomer. In our system, discard is simply "unfed starter" or a "baking portion". It can be used for everything from pancakes and chocolate chip cookies to a thickening agent for your favorite gravies. By treating discard as an ingredient, you move away from a "throw-away" culture and toward a sustainable homestead system.
